Yields

12 servings (approx. 3 cups total)

Ingredients

  • 1 (12-ounce) bag fresh cranberries, rinsed and picked over
  • 2 medium Honeycrisp apples, cored and roughly chopped (peel left on for color)
  • 1 large navel orange, zested and peeled (flesh roughly chopped, seeds removed)
  • 1/3 to 1/2 cup agave nectar or maple syrup (adjust to taste)
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • Pinch of sea salt

Instructions

  1. Prep the Fruit: Wash the cranberries and discard any that look shriveled or mushy. Core and chop the apples into large chunks. Zest the orange, then peel it and chop the flesh, discarding any seeds.
  2. Pulse the Base: In a food processor, combine the fresh cranberries and the orange zest. Pulse 5-6 times until the cranberries are roughly chopped (do not puree).
  3. Add Sweetness and Crunch: Add the chopped Honeycrisp apples, orange flesh, agave nectar (start with 1/3 cup), cinnamon, ginger, and salt.
  4. Process to Consistency: Pulse the mixture until everything is finely chopped and uniform, but still has a distinct texture. You want a relish, not a smoothie.
  5. Taste and Adjust: Taste the mixture. If it is too tart, add the remaining agave nectar and pulse once more to combine.
  6. Chill: Transfer the relish to a sealed container and refrigerate for at least 2 hours before serving to allow the flavors to meld.

Chef's Notes

The Honeycrisp Advantage: We use Honeycrisp apples specifically because their cell structure holds up well in a food processor, providing a satisfying "crunch" rather than turning into applesauce instantly.
Sweetener Choice: Liquid sweetener (agave/maple) is preferred over granulated sugar for this raw application as it blends instantly without leaving a gritty texture.
Make Ahead: This relish tastes significantly better the next day after the natural pectin in the cranberries has had time to gel slightly with the juices.
Assumptions:
Nutritional values are estimates based on standard produce data.
"Negligible" micronutrients are listed as 0% DV or close to 0 but included for completeness as requested.
The sodium content assumes a very small pinch of sea salt (approx. 1/16 tsp for the whole batch).
